Ingredients for 4 persons :

  • 500 g of pumpkin
  • 1/2 onion
  • 50 cl of milk
  • 100 g semi-salted butter
  • 1 slice of smoked bacon
  • 100 g of chicken breast
  • 1 twig of thyme
  • Salt pepper

Chicken Parmentier with Pumpkin

- Cut the slice of bacon into lardons.

- In a saucepan, pour the milk, heat and place the smoked bacon in it.

Leave to infuse for 30 minutes off the heat. Filter.

- Peel and wash the onion.

- Peel the pumpkin, cut it into pieces, place it in the filtered smoked milk.

Add the onion and cook until the vegetables are tender. Take the vegetables and mash them, add the butter. Season.

- Steam the chicken breast topped with the thyme twig for 8 to 10 minutes. Remove the thyme and chop the chicken.

- In 4 large verrines, place a layer of pumpkin puree and a layer of chicken. Enjoy!

- The pumpkin can be replaced by carrot and chicken by veal, pork ...
