Ideal to accompany a summer grill of meat or fish, the vegetable tian is colorful, fragrant and rich in vitamins.

Ingredients for 4 persons :

  • 1 onion red
  • 1 courgette
  • 2 tomatoes
  • 300 g cow mozzarella
  • 1 sprig of thyme fresh
  • 1 branch of rosemary fresh
  • 2 pinches of Espelette pepper
  • Salt flower
  • 60 g Emmental

Vegetable Tian recipe

Preheat the oven to 180 ° C (th.6).

- Peel and mince the red onion.

- Wash and cut the courgette and tomatoes into slices.

- Drain and cut the mozzarella into slices.

- In a gratin dish, arrange the zucchini, onion, tomatoes and mozzarella alternately. Season with fresh thyme, rosemary, Espelette pepper and fleur de sel. Sprinkle with grated Emmental. Drizzle with olive oil.

Bake for about 20 minutes.

Here is a dish evoking both a summer and Mediterranean atmosphere, where the acidity of the tomato and the vegetal aromas are tempered by the milk and the sweetness of the mozzarella. The balsamic nuances of thyme and rosemary and the fruitiness of olive oil aromatically enrich this dish and make it sing. This preparation, through the images it evokes, naturally attracts us to a rosé from Provence such as a Bandol whose spicy and floral notes will blend into the tian. You can also choose a red, as long as it is warm and not very tannic, as are southern wines made from the Grenache grape, such as a Côtes du Roussillon.
